Making Yule Logs
What’s so special about our yule logs? 
Our traditional yule logs are made with our homemade sponge cake formula that has been in our family for generations. After it’s baked, we generously spread red and green buttercream icing on the layer before carefully rolling the cake into a log.
After it sets, our bakers turn the log over to our decorators.
Decorating the Yule Logs
Our decorators hand cut each log before covering them with a rich, creamy chocolate icing. When the main log is iced, a small, side log is added and iced in the same chocolate icing. Each log end is then covered in our homemade chocolate buttercream icing. Gum paste poinsettias and powdered “snow” are added for decoration.
Storing the Yule Log
We recommend storing your yule log in a refrigerator until you’re ready to serve. You can leave it in the box you bring it home in or if you have another storage container, that can work as well. When choosing the best time to pull out your cake for your party, keep the weather in mind. Weather plays a big role in many baked goods and since we do live in Florida, humidity often creates issues for chocolate desserts. The yule logs can sit out on a table in an air-conditioned room for a bit, but we leave that to your discretion.
Serving your Yule Log
These logs are just like most jelly-roll esq desserts. You can slice them as thin or as thick as you desire. While the flowers are made of gum paste, they are not edible. Everything else on the log can be enjoyed.
Any leftovers you may have can be stored in an airtight container for up to five days.

Gingerbread for Christmas
Gingerbread houses are a staple in many family Christmas traditions. That’s why you see gingerbread house kits in just about every store during the holiday season. Some stores even put them out as early as October.
If you’re looking for a way to make great family memories and have a sweet treat in the mix, our gingerbread house kits are the way to go.
Gingerbread House Kits
Our gingerbread house kits come complete with the pre-assembled freshly baked house, candy, and freshly made, royal icing. You can get up to six different candy selections, an icing bag for piping decorations, and festive rings for added scenery.
The House
We begin baking our made-from-scratch gingerbread houses in late November when, theoretically, the humidity in Florida is lower. Our gingerbread house dough formula is one we’ve used for more than fifty years. Making our gingerbread is a huge event which includes using almost every member of our baking staff to complete. Each batch is carefully weighed, rolled, cut, and baked before cooling and setting up.
The Process
Our gingerbread house process is a four-day event.
After a day of making and baking, our bakers allow the house to set up overnight.
Day 2: Our decorators set up the base and walls using made-from-scratch royal icing
Day 3: Our decorators carefully assemble the roof and use royal icing to secure it to the base and walls.
On day 4, the house is ready to be decorated.
Ordering your Gingerbread House
We strive to keep our quality high, which is why in recent years, we have decided to keep our gingerbread house orders to a minimum. We don’t start taking orders until November 1.
You can order an entire gingerbread house kit which includes the house, candy, and icing. Or, you can opt to have the house by itself. Or, if you have your own candy, you can order the house and icing separately.
Our small house is great for individuals or a smaller household.
Our large house is perfect as a centerpiece. If you have children who like to compete, our large house gives plenty of roof space for each to showcase their creativity.

4th of JULY!
We LOVE our great country and look forward to Independence Day every year! It falls on a Tuesday this year which means we will NOT be open. But don’t fear, you can still have our wonderful patriotic treats. We will have our store stocked with RED, WHITE, and BLUE cookies, cakes, and cupcakes all this week. Looking for more savory items? Our amazing chef, John, is ready to whip up delicious salads and sandwiches for you. Salad options include homemade potato, macaroni, as well as pasta salads that are sure to please any American. We also offer sandwich trays that include a combination of ham & cheese, turkey & cheese, roast beef & cheese, and chicken salad. A sub tray includes an abundance of our mini house sub, which is made of salami, ham, Provolone cheese, lettuce, tomato, onion, and bell pepper. Be sure to order Creamy Italian dressing on the side.

America Cupcakes
4th of July cookies are some of our favorite items to make! Some shapes we will be making includes stars, American flags, fireworks, and more! If you like our bachelor buttons, be sure to order some in patriotic colors before coming in as we may be sold out. Our America Cupcake has been a hit since we created it a few years ago. It is a regular sized cupcake that is made with RED, WHITE, and BLUE cake. We top it with our vanilla buttercream icing and then generously sprinkle each one with patriotic stars. It is both a tasty and decorative addition to your table. Our in-store selections may vary by day but we strive to have as many freshly made cookies, cakes, and cupcakes available at all times.

Pumpkin Spice and Everything Nice…
As our countdown to Pumpkin Donuts rolls on, we are busy preparing our signature Spice mixture that will go into many of our autumn products. The combination of spices is a tightly held family secret formula and has been dubbed a ‘Pumpkin Spice’ paradise by many of our customers. And while this Pumpkin Spice may be nice, we are often asked why we don’t begin our pumpkin season when the ‘other guys’ start theirs.
The answer is simple.

Pumpkin Spice is our autumn treat
It seems as soon as the school year begins, stores line their shelves with Halloween costumes, Christmas décor, and of course, pumpkin spiced EVERYTHING. And while we love each holiday, we can also appreciate the importance of slowing down to enjoy the final days of summer.
We regard the tradition of decorating for Christmas after Thanksgiving just as much as we favor filling our shelves with pumpkin spice in autumn. This hard held tradition is a major reason we choose to hold off on anything pumpkin related until the end of September.
The traditional start date for our Pumpkin Donuts has always been the last Friday in September. This year, we will roll out the delicious bites of pumpkin goodness September 27.
We have spent years perfecting the best flavors to create a one of a kind donut that is unmatched. If you’ve never experienced the taste of our secret spice blend, you are certainly in for a treat on September 27.
You can pre-order them to be rolled in a cinnamon-sugar blend or enjoy the traditional glazed pumpkin donuts.
Pumpkin Donut Premier
If you’re really in a rush to try these tasty bites, join us for our one-hour premier at midnight on September 27. We open our doors from 12:00 a.m. to 1:00 a.m. on September 27 to give die-hard Pumpkin Donut fans the opportunity to enjoy the first batch of donuts for the 2019 season.
In recent years, the crowds have grown, the excitement has grown, and the love of pumpkin spice has grown.
If you’re up for a good time at your local neighborhood bakery, we invite you to come on down. Our midnight premier is truly a fun experience for everyone.
Other Pumpkin Spice Products
Pumpkin Donuts aren’t our only pumpkin spice infused item during the autumn months. We produce a variety of products such as Harvest Rings, Pumpkin Muffins, Pumpkin Nut Breads, Spice Cake, Spice Cupcakes, and of course, Pumpkin Pie.
Harvest Rings
Our Harvest Ring is similar to a Bundt Cake. We add our special blend of spices to this pumpkin cake and bake it to perfection. Then we drizzle a thin glaze over the entire cake while it’s still warm to seal all the warm pumpkin flavor inside.
Pumpkin Muffins and Pumpkin Nut Bread
For a quick morning breakfast or a light afternoon snack, our Pumpkin Muffins or Nut Bread can be the perfect item. Each bite of the muffin or nut bread will be bursting with pumpkin and spice flavors.
Spice Cake and Spice Cupcakes
For something a little less pumpkin-y and a little more spice-y, take home a Spice Cake or Spice Cupcake. This is sure to be a flavor you can certainly enjoy all season. We infuse our delicious vanilla cake with ample amounts of our signature spice blend. We have been making this pie with our signature spice blend that has remained a family favorite for more than 30 years. Teacher Gifts All Year Long!
The school year has just begun but it’s never too early to start showing your appreciation for the men and women who pour into our children. Teacher gifts in the form of volunteer hours or teacher supplies can be a major help in almost any classroom.
But what about a gift in a sweeter form?
Gifts for your child’s teacher can be in the form of a weekly treat for well-behaved students or even for those who meet their reading requirements. Some teacher gifts can be more personal, such as a personalized cookie or their favorite cupcake.

We have ingredient lists on our website for iced cookies and some everyday cookies, however, we always stress to error on the side of caution when serving any foods containing potential allergens.

Back to School Time Again
It’s back to school time again and we’re so excited! We LOVE seeing all the fresh faced, mostly smiling children before and after school. While you have been scrambling to get school pens and pencils, new clothing and shoes, and those cute little notebooks with puppies or kittens on them, we’ve been busy little bees getting ready for you.
Back to school time means that most of our customers will return to their regular morning habit of stopping in for a quick bite, coffee, or even a special donut for your littles. To help make your mornings run a little smoother, we’re highlighting some quick and generally healthy breakfast and lunch ideas.
Every parent experiences some sort of morning rush throughout the school year- especially in the first weeks of back to school time. No matter if it’s a case of a silent alarm clock, a bad hair day, or even those pesky shoes that go missing overnight, sometimes just getting everyone out the door before the school bell rings is an accomplishment.
We’ve all been there.
Some of us have set up camp there…just saying.
That’s another topic for another day. So, to ease your morning stress and to help you fuel your children before school, we’ve put together a list of some of our most popular breakfast items.
Our breakfast sandwiches are made with freshly cracked eggs and homemade bread. You can add your choice of meat including ham, turkey, bacon, or sausage. Add cheese if you’d like. We offer American, Swiss, Provolone, and Cheddar.
Want some veggies mixed in? Just ask.
If you’re running short on time, give us a call ahead of time. That way, your breakfast sandwich can be hot and ready when you walk through our doors.
A donut may not provide the protein that a breakfast sandwich does, but it will provide energy for your child to start their school day. We offer over 20 varieties of donuts on a daily basis. And if we don’t have what your little angel wants, we will do our best to whip one up.
Cheese pockets are among our most popular Danish in the morning. And other Danish such as apple or pecan, provide a little more protein as well as energy. Our daily Danish variety includes cherry, blueberry, lemon, and meltaway.
Parents, don’t forget your own needs. We have hot coffee brewing all morning long. And after you drop your littles off, swing back in to reward yourself with a treat.
Do you know we also offer cold sandwiches in the morning?
If you’re low on time or even sandwich supplies, we can make your child’s school sandwich while you eat breakfast. Ham and cheese, turkey and cheese, even peanut butter and jelly can all be ready by the time you leave for school. If you call ahead, you’ll have time to pick out a cookie too.
For more than 11 years, we’ve created a special menu for high school students and teachers. This menu is designed to be quick, easy, and affordable. This tradition will carry on this year as well. If you’re a Fletcher High School student or teacher, be sure to ask for the Fletcher menu when you come in.
Children coming in for after school treats is a wonderful tradition. It brings us so much joy when little faces light up at the sight of all the cookies in our case. Cookie varieties vary daily, but you can be sure to see sugar cookies, decorated cookies, or one of our everyday cookies in the case any time you come in.
Teachers like apples, but they LOVE cookies even more. We can’t be 100% sure, but there’s a good chance your child will get a super big smile when they bring a treat from Cinotti’s into the classroom.
It’s hard to believe it’s back to school time again. It seems like just yesterday we were celebrating the commencement of 7 of our employees.

4th of July Special Hours
With the 4th of July occurring on a Thursday this year, we put serious though into what our hours for the week would be. As most of you know summer is a slower time of year for us. In fact, the days leading up to the Independence Day are on record as being our slowest days.
We will be closed Tuesday, July 2, Wednesday, July 3, and Thursday, July 4.
Last year we were closed on the 4th to allow our team to spend quality time away from work. This year we’ve decided to continue this much appreciated tradition. But this year, we’re taking it a step further.

How to plan ahead for this closing
We know this extended Independence Day closing may affect your business events, family celebrations, and other happenings. This is why as a family we discussed this idea with diligence and prayer before confirming the closing. Our entire team deserves a mini vacation for their hard work and loyalty. The days leading up to the 4th of July are perfect for this.
If you’re planning a cookout, camping trip, a day on the water, or a fun neighborhood gathering, you may still be able to have Cinotti’s treats at your table.
You can pick up your favorite cookies, breads, rolls, and cakes on Saturday, June 29, and still use them for your 4th of July celebrations. Our cakes and cookies can look and taste delicious during your long weekend festivities. The breads, hamburger buns, hot dog buns, and rolls may need to be popped in the freezer for optimal freshness. Simply place your orders before Thursday, June 27, and we’ll have all your Independence Day treats ready for you.

Pack a cooler, lather on the sunscreen, and bring the kids for a full day of fun, family, and fireworks in Jacksonville Beach. The beaches have always been popular for 4th of July celebrations and this year will be no different.
Set up your chairs settle in for an amazing fireworks display that begins at 9 pm.

Sign the whole family up for the Celebration Run. This event sponsored by 1st Place Sports on Baymeadows Road is a fantastic way for the entire family to kick off the 4th of July celebrations. After the race you can enjoy a watermelon festival complete with a seed spitting contest and drawings for prizes.
The 4th of July celebrations in downtown Jacksonville include live music, family-friendly activities, foods, and drinks before the fireworks display begins at 9:45 pm.
On July 4th, the Jacksonville Zoo will be offering BOGO deals on general admission.
Take a day trip to the beautiful Historic Downtown Fernandina Beach for an evening of live music, kid-friendly activities, and the famed Patriotic Pet contest! Full festivities begin at 5:30 pm along the waterfront with fireworks set to start at 9 pm.
Head south to witness one of the biggest fireworks displays on the east coast with the “Fireworks Over the Matanzas” program in historic St. Augustine. While the fireworks extravaganza begins at 9:30, you can enjoy an entire day’s worth of festivities along the cobbled streets.

Making Doodle Cinotti an Italian Cream cake for her birthday has been a longstanding tradition in our family. She loves the flavor combination of moist buttermilk layers filled with our cream cheese icing, pecans, and coconut.
You may not have had the opportunity to try this cake in our bakery before. That’s because in year’s past, making this delicious cake has been reserved for solely for Doodle’s birthday that falls at the end of the year while we’re closed for Christmas.
Reasons for the reluctant production of the Italian Cream cake have varied through the years. At one time, increased time and attention required to make each layer was cited for not wanting to add the cake to our menu. Another time, it was decided that demand for the cake wasn’t high enough to warrant production.
The romantics among us believe, however, that Mike Cinotti was hesitant to create this cake because he wanted to reserve the most special cake for his most special lady.
While the Italian Cream cake is still a must-have in December, we are now offering this family favorite to all of our customers–all year long.
What’s so special about an Italian Cream cake?
Every cake has a special meaning to someone. A chocolate cake may remind them of Sunday dinners at their grandmother’s house while Hummingbird cake may bring back memories of the church potluck dinners. Italian Cream cake has that same magical power.
The buttermilk layers are rich and moist and may transport you to a time when life was simple. Where food was safe from harmful chemicals, families gathered together for dinner, and your mom let you lick the spoon full of cake batter. The pecans and coconut folded into the cream cheese icing drive that wholesome image home.
Our Italian Cream cake combines a delicious dense cake with the light cream cheese icing that can be pleasing to almost any guest at your table. And now that we’re offering this classic cake in our store daily, you can begin to create a new set of memories.
How to get an Italian Cream Cake?
We now offer our Italian Cream cake in an eight-inch cake or as single serving cupcakes. For most families or small gatherings, the store size cake is perfect. It can serve between 12 and 15 guests and is a beautiful centerpiece. If you don’t trust yourself around an entire cake, add a few Italian Cream cupcakes into an assortment.
Our talented cake decorators work hard to ensure you have a fresh Italian Cream cake each morning. While we strive to have a fully stocked case each day, we strongly urge everyone to order their cake prior to arrival. If you can’t decide what cake is best, we have friendly staff that can help guide you in finding the best dessert for any occasion.

Memorial Day Celebrations
Memorial Day celebrations will commence across the city this weekend. Whether you’re planning a weekend getaway, a backyard barbecue, or even a graduation celebration, we have everything you need to make this the best Memorial Day yet!
Before we dive into the pool of sugar and spices, let’s take a moment to pause in remembrance. Memorial Day is dedicated to the men and women who gave the ultimate sacrifice for our country. We pause on this day to remember their tribute and to pray for the families left behind.
Originally, Memorial Day celebrations took place as a way to honor the men killed during the Civil War. It wasn’t until after World War 1 that ALL states of the Union accepted it as a National day of remembrance.
Colonel John McCrae wrote the poem “Flanders Field” which tells of the fallen soldiers who live on through the field of poppies. This inspired woman like Moina Michael to write poems and wear poppies in honor of the fallen. The tradition gained momentum when the Veterans of Foreign Wars (VFW) to begin the “Buddy Poppy” program which provides aid to disabled veterans.
When you see a man in uniform selling poppies outside the supermarket, banks, and other popular buildings, go ahead and make a small donation and wear your red flower proudly.
Memorial Day Celebrations
Memorial Day celebrations will take place across our country the entire weekend. From parades and firework displays to television documentaries and live performances, there will be something for everyone to see and do.
The Jacksonville area will be hosting several events beginning May 24th through May 27th. Lather on the sunscreen and bring plenty of water when you check out these events:
Florida Folk Festival
Head down to White Springs off Highway 41 to enjoy this fun filled festival with the whole family. Three days of celebrations include music, dancing, handicrafts, and live performances designed around the immigrant cultures of the first Floridians. The food cultures represented include Caribbean influences such as chicken pilau, Greek cuisines such as seasoned lamb, and Floridian favorites such as oysters, shrimp, and chocolate covered key lime pie.
Memorial Concert and Picnic in the Park
Make the trek downtown to Memorial Park on Riverside Avenue on Monday to enjoy a free outdoor concert. Display your American pride for this 5:00 pm concert. Pack a picnic and some comfy blankets or chairs so you can relax on the lawns while the U.S. Navy Ceremonial Band performs a myriad of tunes.

Join Jacksonville Beaches residents for an evening of entertainment with the aquatic hero, Aquaman. Bring comfy chairs or a blanket along with a picnic snack and relax under the stars for this free movie event. The movie will begin at 9:00 pm but arrive early for the best seating.

With more than four miles of sand in Jacksonville Beach alone, there is plenty of room for everyone on our shores. Bring the family, bring some shade, lather on the sunscreen, and fill up on fresh water so you can enjoy the weekend fun in the sun.
**For the sake of our environment and the precious ecosystem of our beaches, please bring a bucket for your trash, fill any and all holes, and be mindful of the fragile sea life that call our ocean home.
Of course your local bakery is always ready to provide the best treats and sweets to help you celebrate. Grab a few packs of our made from scratch hamburger buns or hot dog buns for your family barbecue. If you’re not a fan of preparing food, order some sandwiches or catered trays from our kitchen.
No Memorial Day celebration should go without sweet treats either. Order customized iced cutout cookies or come in pick out the ones you want from our showcase. Grab a few packages of out patriotic cupcakes for dessert as well.

Our Memorial Day celebrations always include a tribute to the heroes of our country. We are ever grateful to the men and women who have given their lives in order to afford us our freedoms.
