- Parmigiano Reggiano
Pasta alla Norcina Recipe
Ingredients
- 1 pound fresh pappardelle or paccheri
- 1 pound Italian sausage
- 2 tablespoons Ferrarini Butter
- 1 cup heavy cream
- 1 cup grated Parmigiano Reggiano
- ½ cup diced truffle cheese
- Fresh cracked black pepper
- Salt to taste
Directions
- Bring a large pot of salted water to a boil and cook the fresh pasta according to package directions.
- While the pasta cooks, brown the sausage in a large skillet, breaking it into small pieces as it cooks.
- Add the Ferrarini Butter and allow it to melt into the sausage.
- Reduce heat and stir in the cream. Simmer for 3-4 minutes.
- Add Parmigiano Reggiano and truffle cheese. Stir until smooth and creamy.
- Toss the cooked pasta directly into the sauce.
- Finish with fresh black pepper and additional Parmigiano before serving.
